Ingredients

  • 6 c. shredded zucchini
  • 2 c. crushed pineapple
  • 1/4 c. lemon juice
  • 6 c. sugar
  • 1 box Sure-Jell

Instructions

  1. Cook shredded zucchini for 10 minutes until clear, using some of the pineapple juice in the cooking.
  2. Add crushed pineapple, lemon juice, sugar, and a box of Sure-Jell to the cooked zucchini mixture.
  3. Bring the mixture to a rolling boil.
  4. Boil for 5 minutes, then remove from heat.
  5. Add orange Jello to the hot mixture and stir well.
  6. Pour the jam into sterilized jars, seal, and let cool before storing.
