Ingredients

  • 2 cups zucchini milk
  • 1 1/2 cups whole wheat bread crumbs
  • 2 tablespoons oleo
  • 1/4 to 1/2 cup honey
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup raisins

Instructions

  1. Bring the zucchini milk to a boil.
  2. Pour the hot zucchini milk over the bread crumbs and add the oleo.
  3. In a separate bowl, combine honey, salt, and lightly beaten eggs; then add this mixture to the bread and milk.
  4. Add vanilla, cinnamon, and raisins to the mixture.
  5. Pour the mixture into a greased 1-quart bowl and place it in a shallow pan with hot water.
  6. Bake at 350°F for 1 hour until set and golden.
