Ingredients

  • 3 to 4 zucchini
  • 1 teaspoon salt
  • 3 to 4 eggs
  • salt and pepper to taste
  • 2 tablespoons bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • pinch of oregano

Instructions

  1. Peel the zucchini.
  2. Cut each zucchini in half, then in half again.
  3. Boil the zucchini in salted water for about 5 minutes, then drain well.
  4. Place the cooked zucchini on the bottom of a greased dish.
  5. In a bowl, beat the eggs with salt, pepper, bread crumbs, grated Parmesan, and a pinch of oregano.
  6. Pour the egg mixture over the zucchini in the dish.
  7. Bake in a preheated oven at 375°F (190°C) until the top is golden and set, about 20-25 minutes.
