Zucchini Pie (Quick)

Ingredients

  • 3 c. zucchini, diced thin
  • 1 medium onion, chopped
  • 1 c. Bisquick
  • 1/2 c. oil
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 eggs
  • 1/2 c. Parmesan cheese
  • 3 Tbsp. milk
  • 1/2 c. Cheddar cheese, grated
  • minced garlic (if desired)

Instructions

  1. Mix zucchini, onion and Bisquick.
  2. Mix eggs, oil, cheese, salt and pepper.
  3. Combine the two mixtures.
  4. Add milk; pour into buttered 9 x 13-inch dish.
  5. Bake at 350° for 30 to 45 minutes. Serve warm.
