Ingredients

  • 2 to 3 medium zucchini
  • 2 bay leaves
  • 1 1/4 oz. pignoli (pine) nuts
  • 2 to 3 cloves garlic
  • 1 Tbsp. basil (dry) or 4 leaves (fresh)
  • 1/4 cup olive oil

Instructions

  1. Cut the zucchini lengthwise into quarters, then cut in half.
  2. Bring 1 inch of water with bay leaves to a boil in a saucepan.
  3. Add the zucchini to the boiling water and cook for 3 minutes, covered.
  4. Remove the bay leaves and discard.
  5. Add remaining ingredients (pignoli nuts, garlic, basil, olive oil) and put everything in a blender.
  6. Blend well until smooth.
  7. Serve over pasta.
