  3. Drain lentils and return to the pot; fill with water to the same level as before.
  4. Bring water to a boil, then reduce heat and simmer for 1 1/2 to 2 hours with the cover on.
  5. Add chopped celery, carrot, onion, tomato, garlic, oregano, salt, and pepper 30 minutes before the lentils are done cooking.
  6. Stir occasionally and add more water if necessary to keep the beans covered.
