Ingredients

  • 1 Tbsp. Dijon mustard
  • 4 Tbsp. red wine vinegar
  • 1/2 c. olive oil
  • 1/2 tsp. freshly ground pepper
  • 1 garlic clove, crushed
  • minced parsley

Instructions

  1. Combine mustard and vinegar in a small bowl.
  2. Add olive oil in a thin stream, whisking constantly.
  3. Season with pepper and add the crushed garlic clove.
  4. Mix to blend.
  5. Let dressing stand for 30 minutes for best flavor.
  6. Before serving, mix in minced parsley.
