Zucchini Slice

Ingredients

  • 4 to 5 zucchini
  • 1 large onion
  • 2 carrots
  • 1 c. grated Cheddar cheese
  • 1 c. self-rising flour
  • 1/2 c. oil
  • 3 eggs
  • salt and pepper

Instructions

  1. Grate unpeeled zucchini coarsely.
  2. Grate carrots.
  3. Chop onion. Combine zucchini, carrots, onion, cheese, flour, oil and lightly beaten eggs.
  4. Season with salt and pepper.
  5. Pour into a 9 x 12-inch baking dish.
  6. Bake at 350° for 30 to 40 minutes until browned.
