Zucchini Sweet Chunks

- Select large zucchini squash, about 3 to 4 pounds each.
- Cut zucchini into chunk pieces without peeling.
- Cut onions in half, then slice.
- Place zucchini and onions in a large kettle and pour salt over them.
- Let sit while preparing the syrup.
- In a separate pot, mix vinegar, water, sugar, mustard, white pepper, cinnamon, nutmeg, cloves, turmeric, and ginger. Bring to a boil.
- Stir well to dissolve the sugar.
- Pour the hot syrup over the zucchini and onions.
- Boil the mixture for about 25 to 30 minutes, stirring often.
- When the zucchini look transparent, pour the mixture into sterilized jars and seal.
