Zucchini Sweet Chunks

Ingredients

  • 6 to 7 lb. big zucchini squash
  • 4 lb. dry onions
  • 5 Tbsp. salt
  • 2 1/2 c. vinegar
  • 6 1/2 c. water
  • 3 1/2 c. sugar
  • 1 tsp. dry mustard
  • 1/2 tsp. white pepper
  • 1 tsp. ground cinnamon
  • 1 tsp. ground nutmeg
  • 1 tsp. ground cloves
  • 1 tsp. ground turmeric
  • 1 tsp. ground ginger

Instructions

  1. Select large zucchini squash, about 3 to 4 pounds each.
  2. Cut zucchini into chunk pieces without peeling.
  3. Cut onions in half, then slice.
  4. Place zucchini and onions in a large kettle and pour salt over them.
  5. Let sit while preparing the syrup.
  6. In a separate pot, mix vinegar, water, sugar, mustard, white pepper, cinnamon, nutmeg, cloves, turmeric, and ginger. Bring to a boil.
  7. Stir well to dissolve the sugar.
  8. Pour the hot syrup over the zucchini and onions.
  9. Boil the mixture for about 25 to 30 minutes, stirring often.
  10. When the zucchini look transparent, pour the mixture into sterilized jars and seal.
