Ingredients

  • 4 small zucchini
  • 1 Tbsp. oil (olive or salad)
  • 1 tsp. minced garlic
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. fresh lemon juice

Instructions

  1. Saute the sliced zucchini in 1 tablespoon oil until tender.
  2. Stir in the minced garlic, salt, and pepper, and cook for 1 minute.
  3. Add the fresh lemon juice and grated lemon peel; heat through.
  4. Optionally, add sliced black olives or oil-cured olives before serving.
