Ingredients

  • 18.5 oz. butter flavored cake mix
  • 6 oz. pkg. instant vanilla pudding mix
  • 6 oz. pkg. instant vanilla pudding mix
  • 2 c. whipping cream
  • 2 Tbsp. instant coffee granules
  • 1 tsp. hot water
  • 1/4 c. rum

Instructions

  1. Prepare the cake mix according to package instructions.
  2. Pour the batter into two greased and floured round cake pans.
  3. Bake at 350°F (175°C) for 25 to 30 minutes.
  4. Allow the cakes to cool completely.
  5. Prepare both packages of vanilla pudding mix using half the milk called for on the package.
  6. Cover and chill the pudding until set.
  7. In a mixing bowl, beat the whipping cream until stiff peaks form.
  8. Fold the whipped cream into the chilled pudding mixture.
  9. Divide the combined pudding and cream mixture in half and set aside.
  10. Stir instant coffee granules into hot water and cool the mixture.
  11. Fold the cooled coffee mixture into one half of the pudding and cream mixture.
  12. Split each cake layer horizontally to create four layers.
  13. Place the bottom cake layer on a serving plate and brush with 1 tablespoon of rum.
  14. Spread half of the coffee-flavored pudding over the rum-brushed layer.
  15. Place the second cake layer on top and brush with 1 tablespoon of rum.
  16. Spread about a quarter of the plain pudding over the layer.
  17. Add the third cake layer and brush with 1 tablespoon of rum.
  18. Spread the remaining coffee pudding over this layer.
  19. Add the fourth cake layer and brush with 1 tablespoon of rum.
  20. Frost the top and sides of the cake with the remaining plain pudding.
  21. Sprinkle shaved chocolate over the top.
  22. Cover and chill the assembled dessert before serving.
