Zur is a hearty, traditional sour rye soup with smoky bacon, earthy mushrooms, and garlic, complemented by tender boiled potatoes—perfect for comforting, rustic meals.

Ingredients

  • 1/2 lb. whole wheat flour
  • 1/4 lb. bacon
  • 2 sections garlic
  • 3 cups boiling water
  • salt and pepper
  • 1 piece sour rye bread
  • 2 cups lukewarm water
  • 1 lb. potatoes
  • 1 can mushrooms

Instructions

  1. Cover the whole wheat flour with lukewarm water and leave in a warm place for 24 hours to sour.
  2. Remove the sour rye bread and pass the remaining mixture through a sieve.
  3. Bring 3 cups of boiling water to a boil and slowly pour over the sour mixture, stirring constantly.
  4. Simmer on low flame until the soup boils.
  5. Chop the bacon and mushrooms, then fry until lightly browned.
  6. Add garlic and fry briefly with the bacon and mushrooms.
  7. Add the fried bacon and mushrooms to the soup.
  8. Serve the soup with boiled potatoes.
