Ingredients

  • 2 Tbsp dry yeast
  • 2 c scalded milk
  • 1/4 c honey
  • 1 Tbsp salt
  • 1 c warm water
  • 1/4 c oil
  • 1/4 c molasses
  • 8 c whole wheat flour

Instructions

  1. Dissolve yeast in warm water in a large mixing bowl.
  2. Scald milk and mix in oil, honey, molasses, and salt.
  3. When milk is cool, add to yeast mixture and stir.
  4. Gradually stir in whole wheat flour until well combined.
  5. Turn out onto a floured board and knead until smooth and elastic.
  6. Let rise in a covered bowl until doubled in size.
  7. Punch down the dough.
  8. Divide dough into 2 or 3 portions and shape into loaves.
  9. Place loaves into bread pans and let rise for 30 to 40 minutes.
  10. Bake at 425°F for 12 minutes, then reduce temperature to 350°F and bake for an additional 30 minutes.
