Ingredients

  • 1 cup brown sugar
  • 2 cups molasses
  • 1 cup butter
  • 2 teaspoons soda
  • 2 teaspoons ginger
  • 3 pints flour

Instructions

  1. Rub shortening and sugar together into the flour; add enough more flour to make the dough very smooth, roll very thin, and bake quickly in a hot oven.
  2. The dough can be stored for days by placing it in the flour barrel under the flour; bake a few at a time.
  3. The more flour worked into the dough and the smoother it is rolled, the better and more brittle the cookies will be.
  4. Roll out the dough to wafer-like thinness.
  5. Bake quickly without burning, ensuring they become perfectly cold before setting aside.
