Ingredients

  • 3 1/2 to 4 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 2 (1/4 oz.) packages active dry yeast
  • 1 teaspoon salt
  • 1 cup milk
  • 1/2 cup water
  • 1/4 cup butter or margarine

Instructions

  1. In a large mixing bowl, combine 1 1/2 cups flour, sugar, yeast, and salt.
  2. Heat milk, water, and butter until very warm (120° to 130°).
  3. Add the warm mixture to the dry ingredients; beat for 2 minutes, scraping the bowl occasionally.
  4. Add 1/2 cup flour; beat for 2 minutes, scraping the bowl occasionally.
  5. Stir in enough remaining flour to form a soft dough.
  6. Place the dough in a greased bowl, turning once to grease the top.
  7. Cover the bowl and place it in a pan filled with 98° water to let rise for 15 minutes.
  8. Turn the dough onto a floured surface and shape into 24 balls.
  9. Place the balls in well-greased muffin cups.
  10. With kitchen shears, cut each ball in half, then into quarters, cutting through almost to the bottom of the rolls.
  11. Cover and let rise for another 15 minutes.
  12. Bake at 425°F (220°C) for 12 minutes or until golden brown.
  13. Remove from baking pans and cool on a wire rack.

Tips & Substitutions

For a richer flavor, consider using whole milk instead of skim. If you're out of active dry yeast, you can substitute with instant yeast, adjusting the amount slightly. To make the dough rise faster, place the covered bowl in a warm oven (turned off) or near a warm stovetop. If you prefer a slightly sweeter roll, add an extra tablespoon of sugar.

Serving Suggestions

Serve them warm with butter or alongside your favorite spreads. For a delightful breakfast, enjoy them with jam or honey. They also complement American recipes like Cheese Quiche Squares nicely.

Storage & Reheating

Store leftover rolls in an airtight container at room temperature for up to 2 days. For longer storage, freeze them in a freezer bag for up to 3 months. To reheat, simply thaw at room temperature and warm in a 350°F (175°C) oven for about 10 minutes or until heated through.
