- Dissolve the lime jello in 2 cups of hot water.
- Pour the juice off the canned fruit and add water to make 2 cups of cold juice.
- Add the cold juice to the gelatin mixture and set aside to partially cool.
- Peel and dice the apples.
- Drain the pineapple chunks.
- Slice the canned peaches.
- Grate the carrots.
- Chop the walnuts or pecans.
- Combine the diced apples, pineapple, peaches, grated carrots, and nuts with the gelatin mixture.
- Mix well and refrigerate until set.
