A vibrant and fruity jello salad combining fresh apples, pineapple, peaches, and grated carrots, finished with crunchy nuts for a delightful and colorful side dish.

Ingredients

  • 2 pkg lime jello
  • 2 c hot water
  • 4 or 5 apples peeled and diced
  • 1 can chunk pineapple
  • 1 can peaches sliced
  • 3 or 4 carrots grated
  • 1/2 to 1 c walnuts or pecans chopped

Instructions

  1. Dissolve the lime jello in 2 cups of hot water.
  2. Pour the juice off the canned fruit and add water to make 2 cups of cold juice.
  3. Add the cold juice to the gelatin mixture and set aside to partially cool.
  4. Peel and dice the apples.
  5. Drain the pineapple chunks.
  6. Slice the canned peaches.
  7. Grate the carrots.
  8. Chop the walnuts or pecans.
  9. Combine the diced apples, pineapple, peaches, grated carrots, and nuts with the gelatin mixture.
  10. Mix well and refrigerate until set.
