Ingredients

  • 4 to 6 lb. rump or bottom round beef roast
  • 1 package dry onion soup mix
  • 3 tablespoons A.1. sauce or 57 sauce
  • onions, chopped
  • parsnips
  • 2 cans golden mushroom soup, undiluted
  • carrots, peeled and chopped
  • potatoes, peeled
  • any vegetables you wish to add

Instructions

  1. On a large piece of heavy-duty foil, pour 1 can of golden mushroom soup in the middle; place the beef roast on top of it.
  2. Pour the second can of golden mushroom soup over the roast, then sprinkle the dry onion soup mix and A.1. sauce.
  3. Arrange chopped potatoes, carrots, onions, and parsnips around the edge of the roast on the foil.
  4. Bring the foil edges up and seal all edges tightly about 6 inches above the roast to form a tent, trapping moisture inside.
  5. Bake at 350°F for 3 to 4 hours until the meat is tender and cooked through.
  6. Alternatively, this roast can be cooked on a grill using the same foil method.
  7. The dish will produce its own gravy from the juices and soup mixture during cooking.
  8. Serve hot with a fresh salad for a complete meal.
