Ingredients

  • 1 cup uncooked rice
  • 1 cup whole kernel corn, drained
  • salt and pepper to taste
  • 1 can tomato sauce
  • 1/4 can water
  • 1/2 cup chopped onion and pepper
  • 3/4 pound ground beef
  • bacon strips

Instructions

  1. Place ingredients in a casserole or baking dish with a tight-fitting lid, starting with rice and corn.
  2. Add the ground beef, chopped onion and pepper, tomato sauce, water, salt, and pepper in order.
  3. Finish with bacon strips on top of the layered ingredients.
  4. Cover and bake at 350°F (175°C) for 1 hour.
  5. Uncover and bake for an additional 30 minutes or until the bacon is crisp.
