9 Layer "Iced" Salad

Ingredients

  • 1 medium head lettuce, torn into pieces
  • 1 small can ripe olives, pitted
  • 1 medium cucumber, sliced and peeled
  • 1 large red onion, thinly sliced
  • 3/4 c. celery, diagonally sliced thinly
  • 3/4 c. red/yellow bell pepper, chopped
  • 1 c. carrots, thinly sliced
  • 1 pkg. frozen English peas
  • 1 1/2 c. cubed cooked chicken/ham
  • 3/4 c. mild Cheddar cheese, grated
  • 1 1/2 c. sour cream
  • 1/2 pkg. Ranch dressing mix

Instructions

  1. In a large bowl, mix lettuce and olives as first layer.
  2. Layer next 8 ingredients, beginning with cucumbers and ending with cheese.
  3. "Ice" salad with mixture of sour cream and dressing mix. Refrigerate 2 to 4 hours.
  4. Garnish with bacon bits.
