Delicious Abbey Cakes are soft muffins with warm nutmeg flavor, dipped in margarine and cinnamon-sugar coating, perfect for breakfast or teatime indulgence.

Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk

Instructions

  1. Cream the sugar and shortening together, then add alternately with milk to the creamed mixture.
  2. Spray muffin tins with Pam or thoroughly grease with shortening.
  3. Fill muffin tins about two-thirds full with batter.
  4. Bake at 325°F for approximately 15 minutes.
  5. Remove from oven and dip each muffin in melted margarine (about 6 tablespoons).
  6. Roll the muffins in a mixture of 1/2 cup sugar and 1 teaspoon cinnamon.
