Light and crispy meringue cookies infused with vanilla, studded with chocolate chips and crunchy cornflakes, perfect for a sweet snack or festive treat.

Ingredients

  • 3 egg whites
  • 1/4 tsp. salt
  • 1/4 tsp. vanilla
  • 1 1/2 cups sugar
  • 3 cups crushed cornflakes
  • 1 cup chocolate chips

Instructions

  1. Beat egg whites, salt, and vanilla until frothy.
  2. Beat in sugar, one tablespoon at a time, until very stiff.
  3. Gently fold in crushed cornflakes and chocolate chips.
  4. Drop by scant teaspoonfuls onto a well-greased cookie sheet, well apart.
  5. Bake in a 350°F oven for 12 to 15 minutes.
  6. Cool slightly before removing to a cooling rack.
