Ingredients

  • 1 cup shredded coconut
  • 3 ice cubes
  • 1 teaspoon vanilla
  • 1 1/2 cups milk
  • 2 dried apricots, dates or fresh strawberries (optional)
  • honey or sugar to taste

Instructions

  1. Combine shredded coconut, ice cubes, vanilla, and milk in a blender.
  2. Add dried apricots, dates, or fresh strawberries if desired.
  3. Blend until smooth, adding honey or sugar to taste.
  4. Pour into two 8-ounce glasses and sprinkle shredded coconut on top.
