Ingredients

  • 2 c. black-eyed peas
  • 1 chopped onion
  • 1 beaten egg
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • red pepper or Tabasco to taste
  • oil to deep fry

Instructions

  1. Soak black-eyed peas in water for 1 hour.
  2. Rub beans briskly to remove skins.
  3. Grind beans in a blender or processor with enough water to make a batter-like consistency.
  4. Add chopped onion, beaten egg, salt, pepper, and red pepper or Tabasco to the bean mixture.
  5. Mix thoroughly.
  6. Drop teaspoonfuls of the mixture into hot oil.
  7. Fry until golden brown.
  8. Remove from oil and drain on paper towels.
  9. Serve hot.
