- Soak black-eyed peas in water for 1 hour.
- Rub beans briskly to remove skins.
- Grind beans in a blender or processor with enough water to make a batter-like consistency.
- Add chopped onion, beaten egg, salt, pepper, and red pepper or Tabasco to the bean mixture.
- Mix thoroughly.
- Drop teaspoonfuls of the mixture into hot oil.
- Fry until golden brown.
- Remove from oil and drain on paper towels.
- Serve hot.
