Melon Butter

A refreshing fruit butter blending sweet cantaloupe or peaches with lime and pepper, perfect as a spread or dip for summer gatherings and fruit lovers.

Ingredients

  • 1 cup finely, coarsely chopped cantaloupe, papaya or peaches
  • 1/2 cup butter or margarine
  • 2 tablespoons lime juice
  • 1 teaspoon finely grated lime peel
  • 1/4 teaspoon black pepper

Instructions

  1. In a small saucepan, simmer fruit until softened or microwave fruit in a small microwave-safe dish on High for 3 minutes.
  2. Cool to room temperature.
  3. Place all ingredients in a blender or food processor and process until smooth.
