Ingredients

  • 1 cup softened margarine
  • 1/2 cup shortening
  • 2 cups sugar
  • 3 eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 tablespoons grated lemon rind
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a mixing bowl, beat sugar, shortening, and 1/2 cup margarine together until light and fluffy.
  3. Beat in eggs, one at a time.
  4. Sift together flour, baking soda, and salt.
  5. Alternately stir in the flour mixture and buttermilk into the creamed mixture.
  6. Stir in 1 tablespoon of lemon rind and the lemon juice.
  7. Pour the batter into a greased 9-inch pan.
  8. Bake for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes, then remove from the pan.
