Delightful alfajores cookies feature tender, buttery layers filled with sweet jam or caramel and coated with shredded coconut, perfect for satisfying sweet cravings and sharing with friends.

Ingredients

  • 3/4 cup butter, softened
  • 3 egg yolks
  • 2 1/2 cups cornstarch
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • lemon peel
  • finely shredded coconut
  • jelly, jam, or caramel

Instructions

  1. Mix together cornstarch, flour, baking soda, and baking powder.
  2. Blend butter and sugar together until creamy.
  3. Add egg yolks, one at a time, mixing well after each addition.
  4. Add lemon peel and vanilla extract to the mixture.
  5. Combine the wet ingredients and blend thoroughly.
  6. Add the flour mixture to the wet ingredients and mix well to form dough.
  7. Roll out one-quarter of the dough to about 1/4 inch thickness.
  8. Cut out 1 1/2-inch rounds from the rolled dough.
  9. Repeat with remaining dough portions.
  10. Place the cookie rounds on baking sheets lined with parchment paper.
  11. Bake at 375°F (190°C) for 8 to 10 minutes until lightly golden.
  12. Remove from oven and cool on wire racks.
  13. Once cooled, spread jelly, jam, or caramel on the bottom of one cookie and top with another to form a sandwich.
  14. Roll the edges of the assembled cookies in finely shredded coconut.
  15. Store in airtight containers.
