Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 3/4 cup almonds
  • 1 tablespoon butter
  • 1 teaspoon almond extract
  • 1 teaspoon baking soda

Instructions

  1. Line a cookie sheet with foil and coat with cooking spray.
  2. Cook sugar and corn syrup in a 3-quart pan over medium-high heat to a soft crack stage, stirring constantly.
  3. Add almonds, butter, and almond extract, stirring constantly.
  4. Cook 5 minutes longer, until mixture is golden.
  5. Stir in baking soda; mixture will become foamy.
  6. Pour onto prepared cookie sheet and let stand for 1 hour.
  7. Peel off the candy and break into chunks.
