Ingredients

  • 1 medium head cabbage, shredded
  • 1/2 cup chopped celery
  • 1/2 cup chopped sweet pickle
  • 1/4 cup mayonnaise
  • 3 medium carrots, shredded
  • 2 green onions, chopped
  • 1 teaspoon celery seed
  • 1/4 cup butter or margarine
  • 1/2 cup sweet pickle juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine cabbage, celery, sweet pickle, mayonnaise, carrots, green onions, and celery seed in a large bowl.
  2. Set aside.
  3. Melt butter in a heavy saucepan.
  4. Add pickle juice, salt, and pepper; stir well.
  5. Gradually stir about 1/4 of the hot mixture into the beaten egg.
  6. Add the egg mixture back into the hot mixture, stirring constantly with a wire whisk.
  7. Cook over low heat, stirring constantly, until thickened.
  8. Add dressing to the cabbage mixture and mix well.
  9. Chill for 1 to 2 hours before serving.
