Ingredients

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup blanched almonds
  • 1 cup sugar
  • 1 1/2 cups shortening
  • 1 teaspoon almond extract
  • 1 egg
  • 1/8 cup water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix flour, baking soda, and salt in a bowl.
  3. In a blender, grind 1/2 cup of blanched almonds to a fine powder and add to the flour mixture.
  4. Cream sugar, shortening, almond extract, beaten egg, and water until well combined.
  5. Add the wet mixture to the dry ingredients and mix thoroughly.
  6. Form the dough into 1-inch balls and place on an ungreased cookie sheet, spacing them 2 inches apart.
  7. Press one remaining almond into the center of each ball and flatten slightly with fingers.
  8. Brush each cookie with beaten egg.
  9. Bake for 20 minutes or until light brown.
