Ingredients

  • 8 oz dried apricots
  • 8 oz pitted prunes
  • 8 oz dried figs
  • 4 cups almonds
  • 1 cup flour
  • 1 cup sugar
  • 2 1/4 teaspoons baking powder

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Butter and flour a 5 x 9-inch loaf pan.
  3. Combine dried apricots, prunes, figs, almonds, flour, baking powder, and 3/4 cup sugar; stir to mix evenly.
  4. Use a mixer to beat eggs and 1/4 cup sugar until tripled in volume.
  5. Pour the beaten eggs into the fruit mixture and stir with a spoon to blend.
  6. Pack the mixture evenly into the prepared loaf pan.
  7. Bake for 2 hours or until done.
  8. Cool in the pan for 15 minutes.
  9. Invert the loaf and cool on a rack before serving.
