Crunchy, sweet almond popcorn combines caramelized sugar, butter, and roasted peanuts for a delicious snack perfect for parties, movie nights, or anytime craving a tasty treat.

Ingredients

  • 3 quarts popped dry corn
  • 1 cup sugar or fructose
  • 1/2 cup butter
  • 1/4 cup light corn syrup
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon almond extract
  • 1 cup roasted peanuts

Instructions

  1. Mix nuts and popcorn in a large bowl; set aside.
  2. In a saucepan, combine sugar (or fructose), butter, corn syrup, and baking soda.
  3. Bring to a boil over medium heat; boil and stir until mixture is golden, about 2 minutes.
  4. Remove from heat; stir in almond extract.
  5. Pour over nut and popcorn mixture, and toss to coat.
  6. Cool slightly; break apart while warm.
