Ingredients

  • 3/4 cup butter or margarine, softened
  • 3/4 cup powdered sugar
  • 1 1/2 cups flour
  • 3/4 cup raspberry jam
  • 3 egg whites
  • 3/4 cup sugar
  • 1/2 cup shredded coconut
  • 1 cup blanched almonds, slivered

Instructions

  1. Cream butter or margarine and powdered sugar until light and fluffy.
  2. Add flour and mix well, then press the mixture into a greased 9 x 13-inch pan.
  3. Bake at 350°F (175°C) for 12 to 15 minutes or until lightly browned.
  4. Spread raspberry jam over the hot baked layer.
  5. In a separate bowl, beat egg whites until foamy.
  6. Gradually add sugar, beating until stiff peaks form.
  7. Fold in shredded coconut.
  8. Spread coconut and egg white mixture over the jam layer.
  9. Sprinkle slivered almonds on top.
  10. Bake for an additional 20 minutes.
  11. Cool completely and cut into squares.
