Ingredients

  • 2/3 cup ground almonds
  • 1 stick butter
  • 1/2 cup sugar
  • 2 tablespoons milk
  • 1 tablespoon flour
  • milk chocolate morsels
  • unsweetened cream

Instructions

  1. Preheat the oven to 350°F.
  2. Grind the almonds to a coarse, cornmeal-like consistency.
  3. Melt the butter in a small pan over low heat until clear.
  4. Add all other ingredients to the melted butter and heat until well blended.
  5. Drop teaspoons of the mixture onto a Teflon or non-stick cookie sheet, about 5 inches apart.
  6. Bake one sheet at a time for about 5 minutes or until the wafers are light golden brown.
  7. Remove the pan and let it cool for about 30 seconds before lifting the wafers with a Teflon spatula.
  8. Roll up the wafers immediately while still manageable, leaving a 3/4 inch hole through the roll, with the crunchy side out.
  9. Work quickly; if wafers become too brittle, return the pan to the oven to soften.
  10. When the rolls are cool and hard, dip each end into melted chocolate.
  11. Fill the rolls with unsweetened whipped cream using a pastry bag or a makeshift one from waxed paper.
