- Preheat the oven to 350°F.
- Grind the almonds to a coarse, cornmeal-like consistency.
- Melt the butter in a small pan over low heat until clear.
- Add all other ingredients to the melted butter and heat until well blended.
- Drop teaspoons of the mixture onto a Teflon or non-stick cookie sheet, about 5 inches apart.
- Bake one sheet at a time for about 5 minutes or until the wafers are light golden brown.
- Remove the pan and let it cool for about 30 seconds before lifting the wafers with a Teflon spatula.
- Roll up the wafers immediately while still manageable, leaving a 3/4 inch hole through the roll, with the crunchy side out.
- Work quickly; if wafers become too brittle, return the pan to the oven to soften.
- When the rolls are cool and hard, dip each end into melted chocolate.
- Fill the rolls with unsweetened whipped cream using a pastry bag or a makeshift one from waxed paper.
