Delicious almond tartlets feature a crisp pastry shell filled with sweet almond cream, topped with slivered almonds and a glossy apricot glaze—perfect for elegant desserts or tea time treats.

Ingredients

  • 4 Tbsp. unsalted butter
  • 1/4 c. sugar
  • 1 egg
  • squeeze of lemon juice
  • 1/2 c. ground almonds
  • 20 unbaked pastry shells
  • 4 Tbsp. all-purpose flour, sifted
  • 1/4 c. slivered almonds
  • 2 Tbsp. apricot jam, sieved

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cream the butter and sugar together until light and fluffy.
  3. Gradually beat in the egg.
  4. Add the lemon juice and fold in the sifted flour and ground almonds.
  5. Pipe or spoon the almond mixture into the pastry shells, filling each just below the top.
  6. Scatter with slivered almonds.
  7. Bake for 10 to 15 minutes until golden brown.
  8. Remove from the oven and brush the tops with hot apricot jam.
