Ingredients

  • 1 cup vanilla wafer crumbs
  • 1/4 cup melted butter or margarine
  • 2 (8 oz.) packages softened cream cheese
  • 1/3 cup sugar
  • 2 tablespoons milk
  • 1/2 cup chopped, toasted Macadamia nuts
  • 1 (8 1/4 oz.) can crushed pineapple, drained
  • 1 peeled, sliced kiwi

Instructions

  1. Combine vanilla wafer crumbs and melted butter; press onto the bottom of a 9-inch spring-form pan.
  2. Bake at 350°F for 10 minutes.
  3. In a medium bowl, beat softened cream cheese, sugar, and milk with an electric mixer until well blended.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in chopped toasted Macadamia nuts.
  6. Pour the cream cheese mixture over the crust in the pan.
  7. Bake at 350°F for 45 minutes.
  8. Loosen the cake from the rim of the pan; cool before removing the rim.
  9. Chill the cheesecake thoroughly.
  10. Before serving, top with drained crushed pineapple and sliced kiwi.
