Ingredients

  • 1 c. fine macaroni
  • 1/3 c. diced carrots
  • 1/3 c. diced celery
  • 1 medium onion
  • 2 Tbsp. butter
  • 3 c. tomato juice

Instructions

  1. Cook one cup of macaroni until tender and drain.
  2. Saute the onion in butter until translucent.
  3. Add tomato juice and cook until slightly thickened.
  4. Combine the drained macaroni with the sauce and diced vegetables.
  5. Place the mixture in a baking dish and bake until the vegetables are done.
