Ingredients

  • 9-inch unbaked folded pie crust
  • 8 oz. cream cheese
  • 1/3 c. raisins
  • 1 beaten egg yolk
  • 1 c. canned pumpkin
  • 2/3 c. evaporated milk
  • 1/3 c. sugar
  • 3 egg whites
  • 1 1/2 tsp. pumpkin pie spice
  • 1/2 c. finely chopped pecans
  • whipped cream

Instructions

  1. Let the pie crust come to room temperature according to package directions.
  2. Preheat a baking sheet in a 375°F oven.
  3. In a mixing bowl, beat the egg yolk with the cream cheese until smooth.
  4. Stir in the raisins, canned pumpkin, evaporated milk, sugar, pumpkin pie spice, and chopped pecans.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the pumpkin mixture.
  7. Pour the filling into the prepared pie crust.
  8. Bake on the preheated baking sheet for about 30 minutes or until the filling is set.
  9. Allow the tart to cool before topping with whipped cream and serving.
