Ingredients

  • 2 lb. venison steak
  • flour
  • 1/2 cup fat
  • 1 tablespoon currant jelly
  • salt
  • pepper
  • cracker crumbs

Instructions

  1. Rub the venison steak with a mixture of salt and pepper.
  2. Dip the steak in flour or cracker crumbs; sauté in hot fat until browned on both sides.
  3. Place the cooked steak on a hot dish and cover to keep warm.
  4. Dredge 2 teaspoons of flour into the fat in the bottom of the pan and stir until browned.
  5. Dissolve 1 tablespoon of currant jelly in 1 cup boiling water.
  6. Add the dissolved jelly to the gravy and stir well.
  7. Strain the gravy and pour over the meat before serving.
