  5. Cook bacon until crisp and drain on paper towels.
  6. Chop the bacon coarsely and set aside.
  7. Add chopped onion, parsley, salt, and pepper to taste to the potatoes.

  9. Spoon into a salad bowl, garnish with the remaining bacon and lettuce leaves.

Tips & Substitutions

For the best flavor, choose small new red skinned potatoes, as they hold their shape well. If you prefer, substitute the bacon with turkey bacon or a vegetarian alternative for a lighter dish. A splash of lemon juice can also enhance the flavor profile. Make sure to let the potatoes cool before slicing to prevent them from becoming mushy.

Serving Suggestions

Serve this potato salad alongside grilled meats or as part of a picnic spread. It pairs beautifully with Zucchini And Tomatoes for a fresh summer meal. For a heartier option, consider adding a protein like grilled chicken or fish. Garnish with extra parsley for a pop of color.

Storage & Reheating

Store any leftover Alsatina Potato Salad in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in the microwave, but be careful not to overheat as it can change the texture of the potatoes. Alternatively, enjoy it cold as a refreshing side.
