Ingredients

  • 2 cups All-Bran cereal
  • 1 cup Quaker rounds (2, crushed)
  • 1 cup boiling water
  • 2 cups buttermilk
  • 1 1/2 cups sugar
  • 1/2 cup Crisco
  • 2 eggs
  • 2 1/2 cups flour
  • 2 1/2 teaspoons soda

Instructions

  1. Mix All-Bran cereal, crushed Quaker rounds, and boiling water in a bowl.
  2. Let the mixture cool completely.
  3. Add buttermilk, sugar, Crisco, eggs, flour, and soda to the cooled mixture and mix well.
  4. Refrigerate the batter overnight.
  5. Preheat oven to 375°F.
  6. Fill paper-lined muffin tins with batter.
  7. Bake regular-sized muffins for 25 minutes or small muffins for 20 minutes.
