Ingredients

  • 8 oz. can Pure Almond Paste
  • 1/2 cup confectioners sugar
  • 1/2 cup granulated sugar
  • 1/4 cup flour
  • pinch of salt
  • 2 egg whites
  • 1/8 lb. pignoli nuts
  • Maraschino cherries (optional)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Line a cookie sheet with parchment paper or a fitted brown paper bag.
  3. Break the almond paste into pieces and place in a mixing bowl.
  4. Gradually blend in the confectioners sugar, granulated sugar, flour, salt, and slightly beaten egg whites by hand or using a food processor.
  5. Using two teaspoons, drop heaping teaspoonfuls of dough onto the prepared paper, swirling into oval shapes with peaks upwards.
  6. Decorate each cookie by pressing 4 to 8 pignoli nuts firmly into the dough or pressing a cherry into the center and pressing pignoli nuts around it.
