Amaretti-Stuffed Peaches

Ingredients

  • 1/2 cup white wine
  • 6 ripe peaches, peeled, halved and pitted
  • 12 amaretti biscuits, crushed
  • 1 egg yolk, beaten
  • 3 tablespoons cream, whipped
  • 1/2 cup sugar

Instructions

  1. Boil the white wine and sugar for 5 minutes to form a syrup.
  2. Poach the peach halves in the syrup for 5 minutes, then lift out with a slotted spoon and let cool.
  3. Fill each cooled peach half with crushed amaretti biscuits.
  4. Drizzle with beaten egg yolk and top with whipped cream before serving.
