A creamy, tropical dessert combining pineapple, mandarin oranges, marshmallows, and whipped topping on a graham cracker crust, perfect for family gatherings and summer occasions.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 stick margarine, melted
  • 1 (8 oz.) can crushed pineapple
  • 2 cups boiling water
  • 2 packages orange Jell-O
  • 1 3/4 cups thawed Cool Whip
  • 1 can mandarin oranges, drained
  • 1 1/2 cups mini marshmallows

Instructions

  1. Drain the pineapple, reserving the liquid. Add cold water to the liquid to measure 1 cup.
  2. Stir boiling water into the Jell-O in a large bowl until completely dissolved, about 2 minutes.
  3. Stir in the measured liquid. Refrigerate for 1 1/4 hours or until slightly thickened, similar to beaten egg whites.
  4. Stir in the thawed Cool Whip with a wire whisk until smooth.
  5. Refrigerate for 10 minutes or until the mixture will mound.
  6. Stir in drained mandarin oranges, crushed pineapple, mini marshmallows, and shredded coconut.
  7. Pour the mixture over the graham cracker crumb mixture and serve.
