Ingredients

  • 2 lb. sausage
  • 4 c. pinto beans, cooked
  • 4 cans tomatoes
  • 4 c. water
  • 1 large onion, chopped
  • 4 c. diced potatoes
  • 1 large bell pepper
  • 1/4 tsp. black pepper
  • 1/2 tsp. thyme
  • 1/2 tsp. garlic
  • 1 1/2 tsp. salt
  • 3 large bay leaves

Instructions

  1. Cook the sausage and drain the excess fat.
  2. Add the cooked sausage, pinto beans, tomatoes, water, chopped onion, diced potatoes, and chopped bell pepper to a large pot.
  3. Season with black pepper, thyme, garlic, and salt.
  4. Add the bay leaves.
  5. Bring to a boil, then reduce heat and simmer for 1 to 2 hours.
