Ingredients

  • 1 lb. carrots
  • 1/4 cup carrot liquid
  • 2 Tbsp. grated onion
  • 3/4 tsp. horseradish
  • 1/2 cup mayonnaise
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup melted butter

Instructions

  1. Cut carrots on diagonal and cook in salted water until tender.
  2. Drain the carrots, reserving 1/4 cup of the cooking liquid.
  3. Mix onion, horseradish, mayonnaise, salt, pepper, and carrot liquid to create the sauce.
  4. Combine the cooked carrots with the sauce in a buttered casserole dish.
  5. Mix seasoned bread crumbs with melted butter.
  6. Sprinkle the bread crumb mixture over the carrots.
  7. Bake at 375°F for 20 minutes or until bubbly.
