- Beat the 6 egg yolks until smooth.
- Add 3/4 cup white sugar, 5 tablespoons lemon juice, and grated rind of 1 lemon to the egg yolks. Cook over low heat until thick.
- Turn off heat and add 1 1/2 teaspoons gelatin soaked in 3/4 glass of water. Leave to set until almost cool.
- Beat egg whites until stiff peaks form; gradually add 3/4 cup sugar while beating.
- Fold the cooked lemon mixture into the beaten egg whites.
- Pour the mixture into pie crusts and refrigerate until firm.
- Top with whipped cream before serving.
