Ingredients

  • 6 egg yolks
  • 3/4 cup white sugar
  • 5 tablespoons lemon juice
  • rind of 1 lemon, grated
  • 1 1/2 teaspoons gelatin

Instructions

  1. Beat the 6 egg yolks until smooth.
  2. Add 3/4 cup white sugar, 5 tablespoons lemon juice, and grated rind of 1 lemon to the egg yolks. Cook over low heat until thick.
  3. Turn off heat and add 1 1/2 teaspoons gelatin soaked in 3/4 glass of water. Leave to set until almost cool.
  4. Beat egg whites until stiff peaks form; gradually add 3/4 cup sugar while beating.
  5. Fold the cooked lemon mixture into the beaten egg whites.
  6. Pour the mixture into pie crusts and refrigerate until firm.
  7. Top with whipped cream before serving.
