Anacuchos are flavorful skewers featuring tender beef and pork marinated in a tangy, spicy mixture with Serrano chilies and herbs, perfect for grilling and outdoor gatherings.

Ingredients

  • 1 c. red wine vinegar
  • 3/4 c. water
  • 1/4 c. olive oil
  • 1 1/2 tsp. whole peppercorns
  • 2 to 3 fresh Serrano chilies
  • 2 cloves garlic
  • pinch of oregano
  • big pinch of sweet basil
  • pinch of ground cumin
  • 2 1/2 lb. beef
  • 2 1/2 lb. pork
  • oil for basting

Instructions

  1. Place all ingredients except meat and basting oil in a blender; process until well mixed.
  2. Pour marinade over meat in a glass or ceramic bowl.
  3. Cover and refrigerate for 48 hours.
