Ingredients

  • 1 1/2 lb. stewing beef
  • 2 1/2 Tbsp. oil
  • 2 medium onions
  • 1/4 lb. small mushrooms
  • 1/2 lb. sliced carrots
  • 4 tsp. cornstarch
  • 1 1/2 c. beef stock
  • 2 Tbsp. tomato paste
  • 2 1/2 Tbsp. chopped parsley
  • 1 1/2 c. beer

Instructions

  1. Cut the stewing beef into cubes.
  2. Saute the beef in oil until browned on all sides.
  3. Remove from pan and place in a casserole.
  4. Saute sliced onions in the same pan until golden brown.
  5. Add the onions, mushrooms, and carrots to the casserole with the beef.
  6. Mix cornstarch with a little of the beef stock, then stir into the remaining stock in the pan.
  7. Add tomato paste and chopped parsley, bring to a boil, and stir constantly.
  8. Pour the sauce over the beef and vegetables in the casserole.
  9. Season with salt and pepper to taste, then pour in the beer.
  10. Cover and cook in a 350°F (175°C) oven for 2 to 3 hours, or until the beef is tender.
  11. Allow the dish to cool before serving.
