Ingredients

  • 1 Tbsp. olive oil
  • 1 coarsely chopped onion
  • 6 to 8 scallions, cut up
  • 2 stalks celery, cut up coarsely
  • 1 clove garlic, minced

Instructions

  1. Saute all ingredients except the broccoli.
  2. Add the broccoli after all have been sautéed; season with thyme, basil, salt, and pepper to taste.
  3. Add 6 cups of water and cook uncovered until the vegetables are tender.
  4. Add 1 chicken bouillon while simmering.
  5. Cool the mixture.
  6. Put in a blender and puree until smooth. Return to low heat and serve.
  7. Top with croutons if desired.
