Ingredients

  • 1 angel food cake, sliced into 1/4-inch pieces
  • 1/4 lb. butter
  • 1 1/2 cups powdered sugar
  • 3 egg yolks
  • Juice of 1 lemon
  • Grated lemon rind
  • 3 egg whites
  • 1/2 pint whipping cream

Instructions

  1. Cream the butter and powdered sugar together.
  2. Add the egg yolks one at a time to the butter and sugar mixture, then add lemon juice and grated lemon rind.
  3. Beat the egg whites until stiff peaks form, then fold into the mixture.
  4. Whip the cream until firm, then fold into the mixture last.
  5. Line a 9 x 13-inch cake dish with slices of angel food cake.
  6. Spread half of the filling over the cake layer.
  7. Place another layer of cake over the filling.
  8. Spread the remaining filling over the second layer of cake.
  9. Top with another layer of cake.
  10. Spread the remaining whipped cream over the top layer of cake.
  11. Sprinkle shredded coconut on top.
  12. Refrigerate the assembled dessert.
  13. Cut into pieces to serve, optionally garnishing each with a maraschino cherry.
